Coloured Fried Rice

Ingredients

  • 1 tbsp. extra virgin olive oil
  • 1 small onion, finely chopped
  • 1 red capsicum, finely chopped
  • 1 cup corn kernels
  • 1 cup peas
  • 1 egg, beaten
  • 300g chicken breast, finely chopped
  • 2 cups brown rice, pre-cooked (steamed or boiled)
  • 2 tsp. reduced salt soy sauce

Method

  1. Heat a medium non- stick frying pan over high heat. Add the oil and onion and cook for 2 minutes or until browned.
  2. Add the chicken and cook until browned. Reduce heat and add egg and cook until egg is cooked through.
  3. Add the capsicum, corn, peas and cooked rice, and fry for a further 2-3 minutes.
  4. Season with a little soy sauce and serve.
