Ingredients
- 1 tbsp. extra virgin olive oil
- 1 small onion, finely chopped
- 1 red capsicum, finely chopped
- 1 cup corn kernels
- 1 cup peas
- 1 egg, beaten
- 300g chicken breast, finely chopped
- 2 cups brown rice, pre-cooked (steamed or boiled)
- 2 tsp. reduced salt soy sauce
Method
- Heat a medium non- stick frying pan over high heat. Add the oil and onion and cook for 2 minutes or until browned.
- Add the chicken and cook until browned. Reduce heat and add egg and cook until egg is cooked through.
- Add the capsicum, corn, peas and cooked rice, and fry for a further 2-3 minutes.
- Season with a little soy sauce and serve.
