Ingredients
- 2 1/2 cups cooked quinoa
- 4 large eggs, beaten (or egg replacer)
- 1/3 cup fresh chives, chopped
- 1/3 cup red onion, chopped finely
- 1/3 cup parmesan cheese, grated
- 1 cup wholegrain breadcrumbs
- 1 tbsp. olive oil
Method
- Combine quinoa and egg in mixing bowl
- Stir in chives, onion and cheese – then add in the breadcrumbs
- Form into 1cm thick patties (note: the mixture should be very moist)
- Heat olive oil in a fry pan over a medium heat
- Add the patties, covering and cooking for 3 to 5 minutes, or until patties are brown
- Flip and cook for 2-3 more minutes on the other side until brown
