Quinoa Patties

Ingredients

  • 2 1/2 cups cooked quinoa
  • 4 large eggs, beaten (or egg replacer)
  • 1/3 cup fresh chives, chopped
  • 1/3 cup red onion, chopped finely
  • 1/3 cup parmesan cheese, grated
  • 1 cup wholegrain breadcrumbs
  • 1 tbsp. olive oil

Method

  1. Combine quinoa and egg in mixing bowl
  2. Stir in chives, onion and cheese – then add in the breadcrumbs
  3. Form into 1cm thick patties (note: the mixture should be very moist)
  4. Heat olive oil in a fry pan over a medium heat
  5. Add the patties, covering and cooking for 3 to 5 minutes, or until patties are brown
  6. Flip and cook for 2-3 more minutes on the other side until brown

Age: for 12 months and above
